<p>Dublin’s finest.</p><p><em>Jack Teeling</em> founded the Teeling Whiskey Company in 2012, with a mission to <em>challenge the norm</em> by crafting Irish Whiskey with more depth of personality and character than the current mass-market options, and to become Ireland’s leading independent Irish Whiskey producer. Jack Teeling comes from a family with a <em>long tradition</em> associated with Irish Whiskey. Take for example the <em>Cooley Distillery</em>, which was founded by John Teeling, and Walter Teeling in 1782, setting up a distillery on Marrowbone Lane in Dublin.</p><p>Teeling’s way of doing things is perhaps a <em>tad unorthodox</em>. They blend, age and bottle Whiskey from different sources much in the form of <em>Scottish independent</em> bottlers. And that is the reason why we are so fond of their work. Not only are they the first ones to <em>open a new distillery</em> in Dublin in decades, they also do things with a new perspective and give the traditional Irish Whiskey a<em> new style</em>.</p><p><em>Teeling Single Grain</em> is aged in <em>ex-Cabernet Sauvignon</em> red Wine casks, not in ex-Bourbon barrels as one would presume. It’s predominantly <em>corn grain</em> based, which gives it a neat, sweetened character somewhat reminiscent of Bourbon. No chill-filtration was used so all the natural flavors were preserved. <em>A sweet, smooth sipper! </em></p>
