<p>Tenimenti Grieco – BOSCO DELLE GUARDIE BIFERNO ROSSO DOC2021</p><p>The BOSCO DELLE GUARDIE is a high hill Mediterranean scrub that separates almost in half our best vineyards cultivated in Montepulciano and Aglianico, historic vines at the base of this red wine which has made its own the vegetal, wild and structural essences present in the forest.</p><p><p> GRAPES: Montepulciano 80%, Aglianico 20%</p><p> AROMA: Wild and structural essences present in the forest</p><p> PAIRING: Red meats and mature cheeses.</p></p><p> Winemaking</p><p>Manual harvesting with selection of bunches. Fermentation of the entire blend in steel at a controlled temperature between 26-28° C for about a week. Maceration on the skins for approximately 10 days. Soft pressing and selection of the different fractions of must. Malolactic fermentation in steel and subsequent transfer to French tonneaux for 12 months. It rests in the bottle for 4 months before being placed on the market.</p><p><p> Gastronomic pairings</p><p>Stewed or grilled red meats, game, mature cheeses.</p></p><p> The wine</p><p> Intense ruby red with light violet reflections.</p><p>The nose is intense and broad, with predominant notes of ripe red fruit, followed by pleasant spicy hints.</p><p>In the mouth it is enveloping, warm, and balanced, with elegant tannins, with a good fresh taste, and an inviting finish.</p><p>Soft pressing and selection of the different fractions of must.
