<p>The grapes for this wine come from Francesco’s oldest vineyard, with vines ranging from 45 to 70 years old. The grapes are fermented in oak vats, with regular punch downs to extract flavour and texture from the skins, before it is matured in oak for a little over a year, and bottled unfiltered and without any addition of sulphur. The result is a rich and deep wine with powerful aromas of red fruits, oak, and leather, as well as flavours of cherries, plums, and a nice meaty savouriness. It’s well structured with a full body from the high alcohol content but maintains a nice high acidity to cut through all the richness. </p><p>Francesco Pozzobon, the man behind Tenuta Foresto (Forest Estate), farms 8ha of vines on chalky limestone soil according to organic and biodynamic principles. He favours minimal intervention and local winemaking tradition in the cellar, while also experimenting with various fermenttation vessels, in order to craft wines that truly express the terroir.
