They are located at an altitude between 100 and 300 meters above sea level, with exposure to the West/South-West.</p><p>GRAPE VARIETY50% Cabernet Sauvignon, 50% Merlot</p><p>TYPE OF SOILStrong presence of limestone areas rich in marl and stones and partially clayey.</p><p>VINIFICATION Sorting of the grapes in the field during manual harvesting and subsequent selection upon arrival in the cellar using a sorting table. Soft pressing and destemming of the bunches to avoid pressure on the berries and excessive release of tannin. Alcoholic fermentation carried out in stainless steel vats at a controlled temperature maintained around 27-29°C, without the addition of external yeasts. The macerations of this vintage were slightly reduced: around 12-14 days for the Merlot grapes and 13-16 days for the Cabernet Sauvignon grapes, with frequent pumping over in the open air and délestage to obtain more balanced musts, favoring the aromatic extraction and make the tannins more docile. The malolactic fermentations, which began at the end of October and completed in mid-November, were also carried out in steel without inoculants.</p><p>TRAINING SYSTEM Spurred cordon</p><p>COLOR Intense red with violet reflections.</p><p>BOUQUET Intense and expressive bouquet, with references to cherry, mint, plum, cedar and tobacco.</p><p>PAIRINGSMeats of all kinds, game and mature cheeses.</p><p>TASTE Lively and energetic, consistent with the nose and elegant. Well-worked tannins that accompany the sip in a long and persistent finish.</p><p>AGINGFrom the beginning of December the musts were placed in barriques for 15 months’ refinement. Aging in 225 liter barriques made of partly French oak and a small part (20%) of American oak for a period of 15 months. Use of 45% new wood, 30% second pass wood and 25% third and fourth pass wood in equal shares. Subsequent refinement for 3 months in glass before the start of marketing.</p>
