Nose: This cuvée has a multifaceted structure with a hint of herbs and spices, including aniseed, mint and sage, as well as nuances of fruit aromas, especially apricot, mandarine, honeydew melon, maracuja and passion fruit, all underpinned with salty mineral components. Taste: On the palate, Nova Domus is complex and delicate, offering a creamy softness in an interesting symbiosis with an aromatic minerality, and has the texture for a very long finish.Grape variety:60% Pinot Bianco, 30% Chardonnay and 10% Sauvignon Blanc – Terlano Alto Adige DOCProduction area:Terlano is a wine-growing village located halfway between Alto Adige’s main towns of Merano and Bolzano where the Adige flows through a wide valley in a south-easterly direction. The village and vineyards nestle against the red porphyry rock of Monte Tschöggl on the orographically left side of the valley. Sandy-stony, well-drained soils.Vinification:Manual harvest and selection of the grapes; gentle whole cluster pressing and clarification of the must by natural sedimentation; slow fermentation at a controlled temperature in big oak barrels (30 hl); partial malolactic fermentation (Pinot Bianco and Chardonnay only) and aging on the lees for 12 months partly in big wooden barrels (50%) and partly in tonneaux barrels (50%); blending three months before bottling.Matching:Harmonizes very well with caviar and a good pairing with grilled salmon steaks and fried tuna, fiorentina T-bone steaks, saltimbocca alla romana or braised knuckle of veal; also with a parmigiana with aubergines and truffle fonduta.Serving temperature:12 – 14°C.Ageing potential:more than 10 years.Bottle to:1500 ml – 150 cl – 1,5 lt. magnum bottleAllergens:Wine can contain sulphites.Producer:Terlano WineryTerlano’s tradition as a wine terroir dates back over 2000 years. That vines thrive so well in the lee of Monzoccolo is due to the mild, almost Mediterranean climate with hot sunny days and cool nights during the ripening time. The striking red, easily warmed porphyry soil of Terlano also contributes to the high quality of the grapes. In the heart of this South Tyrolean wine region the Terlano winery was established in 1893. Today the co-operative has over 200 members and a total area of 240 hectares. 70% of the vineyard acreage is planted with white grapes. In modern cellars the fruits of this careful, natural cultivation are turned into wine with that perfect touch and the necessary controls.Because of the mineral content of the wines the region of Terlano is also frequently likened to French vine growing areas.
