<p>The GlenDronach Parliament has been waiting 21 years for this moment to arrive, so take your time to savor this sweet, Sherried lass to reward your patience. </p><p><em>James Allardice</em> was the second person to apply for a license to distill Whiskey in Scotland, way back in 1826. Them’s some good times, my friend! Over the years, <em>The</em> <em>GlenDronach</em> has been owned by a veritable Who’s-Who of the historic lineage of Whiskey masters; from Walter Scott, to Captain Charles Grant, and William Teacher & Sons. </p><p>The late <em>1990’s</em> saw some troubled times for the proud distillery, and many thought that the Spirit suffered. But the good times roll again! The BeRaich Distillery Company bought out the property and has restored this Highland Single Malt to its former glory, and then some. Their entire Whisky line is “sherried,” meaning matured only in Oloroso Sherry casks. Highland, Single Malt, sherry casks, proper aging… <em>I’m sold! </em></p><p><em>The GlenDronach 21YO Parliament </em>is a lesson in maturation. Specifically, the incredible impact that premium barrels play. It is aged for a full <em>21 </em>years in a combination of <em>Oloroso</em> and <em>Pedro Ximenez</em> <em>Sherry </em>casks — two of the most flavorful and intense Sherries coming out of Spain. If you like and love Sherried Whisky — if you like things fruit-forward and on the sweeter side — you are going to adore this one. </p><p>But give this baby a little time. Let her rest in the glass for a bit with a splash of water. We know that you are eager, but take your time. She has been waiting <em>21 </em>years for this moment to arrive, so let the moment linger. The older the Whisky, the more you should let it ripen in the glass. Pour your dram, add a splash of water, then gently cover and let sit one minute for each year of age. You will be surprised at the character this brings out of the Spirit. You will be rewarded with a <em>thick</em>, <em>luscious mouth-feel </em>and <em>sweet complexity </em>that will keep you coming back for more. </p><p>And this bottle know what <em>glory tastes like</em>. It won <em>Double Gold </em>at <em>San Francisco Spirits Competition 2017</em>.</p><p><u>Smartass Corner:</u><em>GlenDronach 21 YO Parliament is not named after any political body. </em><em>Evidently</em><em> there has been a group of crows — “rooks” in the native tongue — that have lived near the distillery for decades.
