<p>Thistledown Where Eagles Dare Shiraz is an expressive wine, likened to a great orator, is complex and powerful, showcasing a tightly woven structure with vibrant red and black bramble fruits, subtle spices, and peppery nuances. Crafted with care, 20% of the grapes are placed in whole bunches in a concrete egg for spontaneous fermentation, while the rest are crushed and layered on top. Without physical extraction, the wine captures the vineyard’s raw beauty, channeling its energy and vitality. Aged 12 months in 300L French hogsheads (50% new), it develops complexity, with each component adding depth and harmony.
