<p>VEGAN / UNCERTIFIED BIODYNAMIC / NO ADDED SULPHITES</p><p>Fragrant and floral, with a grippy structure on the palate, this Pinot Gris has a lovely and light amber hue. Some of it undergoes a bit of maceration before it’s combined with the rest, which undergoes semi-carbonic whole cluster fermentation in concrete. These batches are then aged in large oak barrels and concrete vessels, bringing plenty of complex woody notes and crunchy fruit. </p><p>Tillingham is the brainchild of Ben Walgate, who has quickly become a winemaker to keep your eye on. The primary focus of the label is ecological biodiversity, which has led to the production of distinct, exciting wines.
