Made from a base of the white grapes that go into Cava – Xarel-Lo, Macabeo and Parellada – which bring a zesty freshness and flavours of citrus and pear. These are then combined with the inky black Mando grape which adds lovely summer berry and sour cherry flavours. Mando was one of the most widely planted grapes in Cataluña 70 years ago, but has since almost disappeared. Ramón Jane is on a one man mission to preserve these long forgotten varieties, and we’re thankful to be reaping the rewards!
