After pressing, fermentation took place in steel tanks at a temperature not exceeding 26 °C. The maceration, managed with soft pumping over and delèstage to achieve a gradual and balanced extraction, was continued for approx. 15 days. After racking, the wine passed directly into mainly French oak barrels, where it underwent malolactic fermentation, remaining there for 15 months before being bottled.
