<p>The Valpolicella Ripasso Superiore – Campo Bastiglia DOC, produced by the renowned winery Cà Rugate, represents a magnificent expression of the Veneto wine-growing region. This wine enhances the traditional “Ripasso” technique which endows Valpolicella with a body and complexity superior to its classic version.</p><p>The Valpolicella Ripasso Superiore from Cà Rugate is crafted from a skillful blend of Corvina, Rondinella, and Corvinone grapes. Once harvested and vinified, these grapes undergo a second fermentation on the pomace of Amarone. This process not only increases the alcohol content but also enriches the wine with new aromas and flavors.</p><p>After fermentation, the wine is aged in barriques for about 18 months followed by further refinement in the bottle. The result is a deep ruby-red wine with violet highlights. On the nose, it displays notes of ripe fruit such as cherries and plums, enhanced by nuances of sweet spices and vanilla, thanks to the aging in wood. On the palate, it is full-bodied, warm, and enveloping, with an excellent balance between the freshness of the fruity notes and the well-integrated tannic structure.</p><p>Ideal dishes to pair with this Valpolicella Ripasso Superiore include grilled red meats, game, and aged cheeses.
