VENICA Ronco Del Cerà Sauvignon DOC Collio 2022The Sauvignon “Ronco del Cerà” is a particularly important wine for the winemakers of Dolegna, as it is evocative of the origins of the winery and historically linked to the four generations of the family. On 6 February 1930 Daniele Venica signed the preliminary purchase agreement for a farmhouse in Crò, a town located in the municipality of Dolegna del Collio, thus becoming the founder of the Venica family and founder of the company of the same name. At the time, the central body of the estate consisted of approximately 10 hectares including a rural house, stable, vineyards, fruit trees and surrounding arable land.

ColorThe green shades that appear in youth then turn into dazzling intense straw yellow shades.Olfactory notesThe different exposures to the North, South and South-East of the vineyards give a broad olfactory spectrum. The southern orientation and the prolonged afternoon sun rays give evident warm and fruity notes of yellow peach and melon; while colder climates give classic and elegant vegetal notes such as the aroma of elderflowers.Tasting notesOn the palate it confirms its elegance. The sip is fresh, rich in flavor, with interesting floral and fruity references. Consistent, structured and with good taste-olfactory persistence. To be accompanied withVegetable candies, grilled prawns and lime. Fried courgette flowers. Baked scallops au gratin. Salmon tagliolini with aromatic herbs.Service temperature12/13°CAging potentialover 10 years Alcohol in vol. %13,5%Total acidity ‰:4,74‰HarvestGrapes harvested and destemmed from 24 August to 13 September 2022.Winemaking | RefinementAfter harvesting, the Sauvignon grapes are macerated for approximately 18 hours at a temperature of 10/12°C in special containers, protected from oxygen with innovative systems through the recycling of fermentation carbon, in order to reduce the intake of antioxidants. Approximately 10% of the wine ages on the yeasts in large 20/27 HL wooden barrels while the remaining part in steel containers.BottlingThe wine is then assembled and bottled on the full moons between March and July 2023.
