Their Asolo DOCG vineyard is certified a ‘biodiversity friend,’ avoiding monoculture to encourage local flora and fauna. The pale straw-yellow Prosecco features fine bubbles and aromas of ripe golden apple, reflecting the medium-depth decarbonated soils on Montello and Colli Asolani hills. Vines are single espalier trained with double canopy, at 3,000 vines/ha.
