<p>This digestif is not fortified, but maintains a bright, nutty, dry palate. Its grapes are dried on racks for 7-10 days to concentrate their sugars, then pressed and aged for 3 years in small barrels (called Caratelli). After this, it is then aged further in the bottle for another 2 years.
