It is characterised by an incomparable aroma, but has many problems in cultivation: late frost, juice stagnation and alternance and thus very irregular yields. It reaches its highest quality on the shady side of the valley at altitudes between 600 and 800 m. a. s. l. It must be harvested overripe from the tree and, pitted by hand, immediately put into the mash barrel.
