<p>The cask that went on a journey</p><p>Founded in <em>2004 </em>when there were <em>only three dozen distillers</em> in the USA, Westward is going stronger than ever today when there are <em>more than 2000</em> in the country. Guess they are doing something right, right? In a completely new way of thinking about Whiskey, Westward has put this <em>holy Spirit</em> on a pedestal, proclaiming no tradition or whiskey-making process to be too holy to be reconsidered – if that means the Whiskey might be better for it. So they make things a bit differently. <em>Building their flavor from scratch</em>, by brewing pale ale from <em>local Northwest malted barley</em> and intensifying it by <em>double distillation</em> in custom <em>low-reflux pot stills</em>, they transform the <em>fresh pale ale</em> into a robust, bold, and exquisitely balanced Whiskey. </p><p>When the Westward Distillery brews its pale ale, they don’t only produce a starting vase for its Whiskey, but also some nice <em>ale-infused barrels</em>. Those barrels are then sent to their brewing collaborators from <em>Oregon</em>, famous for their brewing culture, to be filled with deep, rich stout, pushing the boundaries of flavor these casks are able to produce. Once filled with stout flavor, they are returned to Westward, where, you guessed it, they are filled with some neat<em> Westward Single Malt</em>. Maturing in ex-ale, ex-stout casks for one year, this spectacular <em>award-winning</em> Single Malt takes on notes of caramel, chocolate, and toffee. Bottled at an ABV of <em>46%</em>, this Single Malt is best enjoyed neat or on the rocks.</p>
