Yalumba The Signature Cabernet Sauvignon Shiraz, Barossa Valley, Australia, 2016 The 47th release of this classic Cabernet Sauvignon and Shiraz blend. Matured for 20 months in 37% new French barriques, Hungarian, French and American hogsheads with the balance in older French, Hungarian and American barriques and hogsheads. Some of the Shiraz vines were planted in 1925. Wild yeast fermentation of each grape variety, separately, parcel by parcel. Bottled unfined.Producer Tasting Note:A very deep, dense, red in colour. Aromas of red currants, perfumed cedar and complex, savoury, dried herbs. This Cabernet Shiraz blend shows precise aromatics and is classically rich through the middle palate with exotic florals, cranberry complexity and dark chocolate. A full-bodied wine complemented with a long, flowing, precise tannin profile. A wine that truly reflects the generosity and refinement of the 2016 vintage. Very stylish.Critics’ Tasting Notes:”Yalumba’s 2016 The Signature Cabernet Sauvignon Shiraz is a Barossa-based blend of 53% Cab and 47% Shiraz. Aged in a mix of barriques and hogsheads (28% new), it offers up scents of cherry, cassis and tobacco, with grace notes of cedar and vanilla. Medium to full-bodied, it’s concentrated, silky, streamlined and long on the finish—very much a classic claret style despite the high proportion of Shiraz. Each year’s edition of the wine is dedicated to a notable Yalumba employee; the 2016 is dedicated to Chief Winemaker Louisa Rose.” Drink 2021-203594/100 points, Joe Czerwinski, WINE ADVOCATE, February 2021″Tar, earth and gravel notions hover above fully ripe, sumptuous notes of plum and blueberry. More air introduces a hint of vanilla and milk chocolate. The palate comes in with real freshness, framing these aromatic notions with precision and clarity. Yes, this is sumptuous and big but also elegant and fine-boned. Tannins are velvety, ripe and smooth but it is the inky richness of the fruit and the aromatic layers of blueberry that completely disarm you. Very long. Wonderful now, certain to evolve.”96/100 points, FALSTAFF (Austria), January 2022Also awarded Gold Medalat TEXSOM International Wine Awards, 2021Food Match: Pair with beef fillet accompanied by beetroot and horseradish, or pinto beans with mushrooms and caramelised onions.Yalumba The Signature Cabernet Sauvignon Shiraz, Barossa, Australia, 2016
